This is an ube ice cream cookie sandwich, and yes, that purple is completely natural in color. Ube originated in the Philippines and is a form of purple sweet potato. Chadlou's uses Dave's Ice Cream (a local company based in Waimanalo with several locations over the island of O'ahu). You can select whichever type of cookie you'd like from what they have available (we chose chocolate chip) and they make your very own custom ice cream cookie sandwich. Brilliant! chose ocean view, high floor room, the view was definitely worth that extra money. staff was great, they had beach chairs, toys, umbrellas to borrow which was great. staff was responsive to all concerns, one down side, felt like their elevators were slow most of the time
