This is an ube ice cream cookie sandwich, and yes, that purple is completely natural in color. Ube originated in the Philippines and is a form of purple sweet potato. Chadlou's uses Dave's Ice Cream (a local company based in Waimanalo with several locations over the island of O'ahu). You can select whichever type of cookie you'd like from what they have available (we chose chocolate chip) and they make your very own custom ice cream cookie sandwich. Brilliant!
