Horse riding in Vilcabamba, Ecuador, is amazing. You'll traverse steep ridges over a couple days and stay in rudimentary huts like this. You'll feel invigorated, like a forest mountaineer. Horses slide down mud on the way home (at least with us). Try this even if you're not confident with horses. Things will be okay and it is well worth it!
