Excellent choice. Well worth our detour from motorway for overnight stay and to benefit from restaurant. Secure parking and peaceful, relaxing setting. Well run and friendly environment.
Many, many years ago we had stayed at the Auberge run in Colombey by the current hotelier's parents and had great memories.
We were given a very warm reception by all the staff at this new version run by the next generation, with a little help from Mum, and enjoyed our stay. Traditional hotels of this type are increasingly difficult to find as France is engulfed in formulaic chain hotels with no character and no restaurant. The setting is stunningly beautiful with views across open fields. We stayed in late March so stayed indoors but it looks like a summer stay and outdoor eating would be spectacular.
One small point. Its difficult to find your way in and even more difficult if you listen to the helpful locals.

Easy to find this old fashioned style Hotel. The welcome from the staff and the room facilities were perfect. The food in the restaurant is excellent with a wine list to match. Ideal for a romantic away weekend.
Room comfort was 5 star, as we did not need an extra bed.
Breakfast was OK, bread and pastry freshly baked but not a lot of choice in cheeses or other spreads. We will choose this place again when coming back to this region.
Beautiful B&B in beautiful part of Champgne region
Beautiful rooms, friendly staff, nice surroundings, pretty village, a very good Michelin star restaurant on site.
Room comfort would have been 5 star, but the extra bed had a disappointing 1 star mattress, so average 3 stars.
Breakfast was OK, bread and pastry freshly baked but not a lot of choice in cheeses or other spreads.
We asked if it was possible to buy a baguette on the day we left to take with us on the road and the gave us a freshly baked one free of charge, so extra credits for that.
We will choose this place again when coming back to this region, but most definitely won't book the extra bed!
We enjoyed our third brief stay at this warm hotel with its innovative restaurant. However when you are located between two churches the Matins bells at 7-00 am can catch the unwary ! Earplugs needed for a "lie in". Sadly on this visit we found the restaurant staff to be somewhat pretentious and quick in speech; making no effort to accommodate "tongue tied foreigners" ?
Le repas du soir était excellent mais nous n'avons pas apprécié d'attendre pendant 40 minutes avant de recevoir le premier plat et étions prêts à partir.
Nous estimons cette attitude très regrettable dans ce genre d'établissement.
